Villagers are getting ready for the winter in the Günbahçe village of Sivas. Production begins in the summer months, allied with the rhythms of nature. The crops planted during the summer are collected in autumn and prepared for winter.
Tarhana, ideal food for winter, is one of the most important foods in the region. Based on a fermented mixture of grain and yoghurt, and often used to make thick soups, tarhana is produced by the women of the village. It is quite difficult to make with summer vegetables and requires fermentation in yoghurt before a long drying period.
